  • 1 Flaky Butter Pie Dough
  • 7 baking apples
  • 3 tablespoon + 1 cup granulated sugar
  • juice of two lemons
  • 8 tablespoon cubed unsalted butter
  • half a cup of each: heavy cream, demerara sugar
  • half a teaspoon of each: angostura bitters, fresh nutmeg, ground allspice, ground cinnamon, kosher salt, freshly ground black pepper, half a tablespoon flake sea salt, 1 egg, lightly beaten with a tablespoon of water
On a flour-covered surface, roll a disk of dough into a 12-inch round, then try to fit it on a 9-inch plate, in such a way that 1 inch will be left overhanging from the plate. Lightly flour a piece of parchment paper and form another 12-inch round, then trim from it a 9-inch square. Discard the edges you cut out. Toss apples with two tablespoons of granulated sugar as well as lemon juice, then cover everything with plastic and leave it for an hour. Whisk a cup of sugar and a quarter of a cup of water in a saucepan and cook over medium heat, until the sugar dissolves ā€“ do not stir! Next, add butter and bring to a boil. After about 20-25 minutes the mixture will turn golden red-brown ā€“ stop cooking. Remove from the heat source and carefully add cream, stirring constantly. Next, sprinkle it with sea salt. Lay three strings of dough vertically over the pie, then fold the first and third ones in half upward. Unfold them over the second string of dough, then fold the second string upward. Lay another string below. Unfold two more strings - one vertical and one horizontal. Unfold the vertical strip over the bottom horizontal one, and then fold it downwards. The horizontal strip place just above the pie's center, and then unfold the vertical string you just laid. Pinch bottom crust and lattice edges, and roll them towards the center of the pie. Brush egg over crust and sprinkle the lattice with more demerara sugar and salt. Bake for about an hour, or until the crust turns golden and the filling becomes bubbly. One of the best caramel desserts out there!

  • 4 lb. crisp apples
  • a teaspoon canola oil
  • 1 Ā½ cups granulated sugar
  • 2 tablespoons butter
  • half a cup heavy whipping cream (at room temperature)
  • 2 tablespoons dark, brown sugar
  • 2 teaspoons lemon juice
  • 1 Ā½ teaspoon vanilla extract
  • half a tablespoon kosher salt
Preheat the oven. Next, peel the apples and core them. Cut each apple into eight pieces. Toss each piece with oil and place it on a parchment paper-covered baking sheet. Roast until golden then set aside. After the apples cool down a bit. use a food processor to puree them slightly. Combine sugar and half a cup of water in a saucepan, over medium heat. Cook without stirring for about ten minutes, or until the food thermometer reads 385-390 degrees Fahrenheit. After the mix starts to caramelize, swirl the pan around a bit to ensure an even distribution of color. Slowly whisk in cream and butter. Lower the heat a bit, and whisk for about 2 minutes or until thick. Remove from the heat, and also whisk in some brown sugar. Activate the motor of the food processor and, slowly and gently, stream caramel into bowls with apples, then puree until slightly smooth. Next, just add vanilla, salt, and lemon juice and mix till all ingredients combine. And voila ā€“ you have your dessert with caramel!

4. Fried Chicken Skin Caramel

  • 3 oz chopped chicken skin
  • a tablespoon kosher salt
  • quarter a tablespoon dried sage
  • 2 pinches cayenne pepper
  • a cup chicken stock
  • half a cube chicken bouillon
  • 2 cups caramel sauce (can be store-bought)
  • half a teaspoon freshly ground black pepper
Heat a cast-iron skillet (preferred size is 10 inches) over medium heat. Add the chicken skin and half the amount of each following ingredients: kosher salt, cayenne pepper, and sage. Cook (and stir sometimes) until the chicken skin turns golden ā€“ should take about 10 minutes. Remove skin with a slotted spoon and put on a paper-towel-lined bowl. Allow it to dry and cool completely, then chop finely. Set the caramel sauce aside. Add the remaining sage, the stock, and the bouillon to a medium-sized skillet. Scrap any of the browned bits in the pan. Bring to a simmer and cook for about 20-25 minutes, until the liquid has completely evaporated. Add caramel sauce and cook until everything thickens a bit and becomes a few shades darker ā€“ for about 30-40 minutes more. Stir the rest of the ingredients (except the chicken skin). Stir for a few moments. Then, transfer the mix to a bowl and let it completely cool down. Now stir in the crispy chicken skin. You should serve instantly, over some ice cream. You can, however, also keep this dessert with caramel in the refrigerator for a month or so ā€“ if so, place it in a tightly closed, airtight container.
